Classic Meat Sauce (Print this)
Olive Oil
1 lb ground chuck (85% fat for best taste)
1 large onion, diced
3 cloves garlic, minced
Salt and pepper
Oregano (2 to 3 TBLSP depending upon taste)
1 small can tomato paste
1 15 oz can diced tomatos
2 15 oz cans tomato sauce
3 TBLSP dark brown sugar

This recipe is about layering flavors. Brown meat in olive oil until brown (but not crusty). Add diced onion and sweat them in meat for about 2 mins. Add minced garlic and salt, pepper and oregano and stir in meat mixture. Add can of tomato sauce and cook 1 minute. Add diced tomatos and tomato sauce. As you empty each can in the mixture, add enough water to 'rinse out' the can. Add the brown sugar and re-taste for seasonings. Simmer on the stovetop for approximately 30 to 45 minutes. Good the day of, several days later and freezes well.
